Overview
In ice cream production, pasteurised and homogenised mix is held cold in aging tanks for several hours before freezing. Aging lets fat crystallise and stabilisers hydrate, which improves whipping, body and melt resistance. The tank keeps the mix agitated and cooled throughout this stage, and can also be used for blending and heating.
This cylindrical tank is built in SUS304 stainless steel, with the featured range of 1,000–5,000 L within a wider 500–100,000 L tank programme. Horizontal and vertical versions are available, and the structure can be customised. It has a 7.5 kW drive at 380 V, 50 Hz, PLC control and is CE and ISO approved, with a 12-month warranty.

Why does ice cream mix need an aging tank?
Holding the mix cold for several hours lets fat partially crystallise and stabilisers fully hydrate. This improves air incorporation in the freezer and gives a smoother body and better melt resistance.
What sizes are available?
